Saturday was full of entertainment visiting the Asian American Festival then a late lunch at Mexico Lindo .
In the evening we attended SAVE's annual fancy dress fund raiser The Chocolate Indulgence. A night of good wine, good food, and chocolate. ;)
Today due to the rain, we didn't do any of our planned outdoor clean-up activities, so I'm making a practice run of my chili prior to mike a huge pot for our BayCon party .
5 different types of fresh chili pods, 3 different type of chili powder, fresh garlic and 3 different onions. 5 cloves of Garlic, 1/2 of each of the onions & 1/2 the peppers sauté first, then cook the rest with the frying meat. Which is 1 pound of taco sliced beef and 1.5 pounds of ground meat. A couple cans of tomato bits, 1 can of tomato paste. Simmer it all in a big pot, till all the flavors mingle, keep adding chili powders to bring out the heat and chili flavor. In the last 30 minutes, add 3 types of beans and a bit of masa flour thicken. Simmer without a lid to evaporate some liquid.
**Edit to add: Just added my "special" ingredients"... Yum! If a bit heavy and late with one of them, but it will cook down a notch.
Serve with fresh cornbread.
